Apple Salad Dijon

Serves 4 • Serving size: 1/4 recipe

8 medium celery sticks

2 medium Granny Smith apples

4 Tbsp canola mayonnaise

2 Tbsp Dijon mustard

2 tsp cider vinegar

1/2 tsp Splenda

2 tsp tarragon

Black pepper, to taste

1. Cut the celery into 1 1/4-inch matchsticks and reserve celery leaves for garnish. Cut the apples into 1 1/2-inch slices.

2. In a bowl, whisk together the mayonnaise, mustard, vinegar, Splenda, tarragon, and pepper until the dressing is smooth. Add the celery and the apples. Toss the salad and serve garnished with celery leaves.
